Pure, Raw Honey
Our honey does not have any added ingredients. It is classified as raw since it has not been pasteurized above 45 C and has not had its pollen filtered out. As a result, it can crystallize quickly, which does not affect taste and quality.
This Season’s Offerings
LAVENDAR HONEY
Lavendar Honey is a premium honey and collected in small quantities. It has a white to light amber color. Medium sweet with a flowery, pleasant aroma. It goes well with chamomile tea and also pairs with feta cheese, blue cheeses and triple cream soft cheeses. Blend with olive oil and sherry vinegar for a light herbal dressing on baby greens.
PINE AND HEATHER HONEY
Also known as Pine & Reiki or Pine & Sousoura honey. It has a smooth and light, delicate sweetness due to its low sugar levels. Pine & Heather honey is a dark amber color.
WILD OAK HONEY
Wild Oak Honey is made from the Valonia oak tree. It is one of our dark honeys with an intense, savory aroma and a dark caramel color.

Background On Conifer & Deciduous (Pine, Fir, oak) Origin Honey
Honey originating from conifer trees is known as Honeydew Honey. Honeydew honey originates from a symbiotic relationship between conifers (fir, spruce, pine), and deciduous (mostly different oak species and chestnut) and Metcalfa pruinosa (leafhopper). Its distinct origin was determined by the French naturalist, Reaumur in 1740 to be produced by aphids. In fact, this strong-tasting, mineral-rich, savory honey is the result of a relationship between aphids and bees that is common throughout the world, yet unbeknownst to most.
There has been research that indicates that honeydew honey also has higher than average antibiotic properties due to higher levels of Glucose Oxidase which leads to the production of Hydrogen Peroxide, in particular oak honeydew. Next in line comes chestnut, fir, heather, and pine honey.
